- 1 lb ground beef
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1 egg
- 2 cloves garlic
- 1 medium onion
- 1 medium carrot
- 1 celery stalk
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
Instructions
- In a large mixing bowl, combine ground beef, Parmesan cheese, breadcrumbs, parsley, egg, minced garlic, oregano, salt, and pepper; mix well and form into meatballs.
- Heat olive oil in a large pot over medium heat; brown meatballs on all sides (5-7 minutes) then set aside.
- Sauté chopped onion, carrot, and celery in the same pot for about 5 minutes until softened; add garlic and cook for another minute.
- Stir in diced tomatoes and broth; bring to a simmer while scraping browned bits from the pot.
- Return meatballs to the pot and let simmer for 15-20 minutes until cooked through.
- Stir in heavy cream and season with basil, oregano, salt, and pepper; simmer for an additional 5 minutes.
- Serve garnished with fresh parsley and grated Parmesan if desired.
