- 1 lb ground chicken
- 1/2 cup breadcrumbs

- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley (chopped)
Instructions
- In a mixing bowl, combine ground chicken, breadcrumbs, egg, Parmesan cheese, minced garlic, salt, pepper, and thyme. Mix until well combined but do not overmix.
- Shape the mixture into meatballs about 1 inch in diameter and place them on a plate.
- Heat olive oil in a large skillet over medium heat. Sear meatballs until golden brown on all sides (about 6-8 minutes). Remove from skillet.
- In the same skillet, melt butter over medium heat. Add sliced mushrooms and cook until tender (about 5 minutes). Stir in minced garlic and cook for an additional minute.
- Pour in heavy cream and chicken broth; stir well. Add cooked meatballs back into the skillet and simmer for 5 minutes until heated through.
- Garnish with fresh parsley before serving your creamy mushroom chicken meatballs over pasta or rice.
