- 8 oz boneless skinless chicken breast or thighs
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1 cup finely chopped onion
- 2 cloves garlic, minced
- 8 oz pasta (penne, spaghetti, or linguine)
- 1 cup chicken broth
- Fresh spinach
Instructions
- Prepare your ingredients by chopping the chicken, onion, garlic, and turkey bacon.
- In a large pot over medium heat, add olive oil and cook seasoned chicken until golden brown. Remove and set aside.
- In the same pot, cook turkey bacon until crispy. Add onion and garlic; sauté until softened.
- Return chicken to the pot along with crushed red pepper flakes (if using). Stir in pasta and pour in chicken broth. Bring to a boil.
- Reduce heat to low, cover, and simmer until pasta is cooked through (about 10-12 minutes), stirring occasionally.
- Once pasta is tender, stir in fresh spinach until wilted. Adjust seasoning if necessary before serving warm.
