- 170 g digestive biscuits
- 100 g butter melted
- 900 g cream cheese softened to room temperature
- 200 g caster sugar
- 160 g sour cream
- 1 ½ teaspoons vanilla extract
- Pinch of salt
- 4 large eggs room temperature (lightly beaten)
- 50 g granulated sugar
Instructions
- Preheat your oven to 160°C (320°F) and prepare your springform pan.
- For the crust, crush digestive biscuits and mix with melted butter. Press into the springform pan and bake for about 10 minutes.
- In a mixing bowl, beat softened cream cheese and caster sugar until smooth. Add sour cream, vanilla extract, salt, and eggs one at a time; mix until combined.
- Pour the filling over the cooled crust and bake in a water bath for about 60 minutes or until slightly wobbly in the center.
- Cool in the oven for an hour, then refrigerate for at least four hours before caramelizing sugar on top just before serving.
