Ingredients
- 1/4 cup vegetable oil
- 16 corn tortillas (6-inch)
- 2 cups refried beans, warmed (16-ounce can)
- 1 teaspoon vegetable oil
- 1 pound ground beef
- 1 tablespoon taco seasoning
- 2 cups enchilada sauce (or use taco sauce)
- 8 ounces cheddar cheese, shredded
- Toppings: Diced tomato, sliced black olives, green onion, hot sauce
- Salt to taste
Instructions
- Heat vegetable oil in a frying pan over medium heat. Fry corn tortillas until golden brown and crispy; drain on paper towels.
- Preheat your oven to 350°F (175°C).
- In another pan, heat 1 teaspoon of vegetable oil and cook ground beef until browned. Stir in taco seasoning and 1/4 cup of water; simmer for 10 minutes.
- Assemble pizzas on a baking sheet with layers of tortilla, enchilada sauce, refried beans, seasoned beef, another tortilla, more sauce, and cheese.
- Bake for about 10 minutes until the cheese is melted and bubbly.
- Top with diced tomatoes, black olives, green onions, and serve immediately.
