- 2 pounds mixed baby potatoes, halved
- 1 lemon, quartered
- 4 cloves garlic, smashed
- 1/4 cup fresh oregano, chopped
- 1/4 cup extra virgin olive oil
- 8 ounces feta cheese
- 3 ounces cream cheese, at room temperature
- 2–4 tablespoons lemon juice
- 1/2 cup mixed chopped herbs (basil, dill, or parsley)
- 2 teaspoons honey
- 1–2 tablespoons sesame seeds
- 1/4 teaspoon smoked paprika
- Chili flakes
- Kosher salt and black pepper
Instructions
- Preheat the oven to 425°F (220°C).
- On a baking sheet, toss the halved potatoes, lemon wedges, garlic cloves, and chopped oregano with olive oil. Season generously with salt and pepper.
- Roast for 20 minutes until tender. Remove charred lemon and garlic; return potatoes to oven for an additional 20-25 minutes until crispy.
- For the creamy feta sauce, blend feta cheese, cream cheese, and lemon juice until smooth.
- Serve warm by tossing potatoes in herb oil and drizzling with feta sauce.
