- 3 lb chuck roast (trimmed)
- 2 tbsp steak seasoning
- 1 tbsp dried thyme
- 1 cup beef broth
- ⅓ cup water
- optional: 2 lbs potatoes
- optional: 1 lb carrots
- optional: 1 yellow onion
- oil
- 1 tbsp cornstarch
Instructions
- Season the chuck roast by coating it with oil and rubbing both sides with steak seasoning and thyme.
- In a skillet, sear each side of the roast over high heat for 2-3 minutes until browned. Transfer to the slow cooker.
- Pour beef broth into the skillet, scrape up bits from the bottom, then pour into the slow cooker.
- If using vegetables, prepare them in a bowl with oil and seasonings, then place on top of the roast.
- Cook on low for 7-8 hours or high for 3.5-4 hours; low is preferable for tenderness.
- Check tenderness around cooking time; if needed, thicken gravy with cornstarch dissolved in water.
- Serve chunks of meat on a platter or back in the slow cooker.
