  • 1 tbsp dried thyme
  • 1 cup beef broth
  • ⅓ cup water

  • oil
  • 1 tbsp cornstarch

Instructions

  1. Season the chuck roast by coating it with oil and rubbing both sides with steak seasoning and thyme.
  2. In a skillet, sear each side of the roast over high heat for 2-3 minutes until browned. Transfer to the slow cooker.
  3. Pour beef broth into the skillet, scrape up bits from the bottom, then pour into the slow cooker.
  4. If using vegetables, prepare them in a bowl with oil and seasonings, then place on top of the roast.
  5. Cook on low for 7-8 hours or high for 3.5-4 hours; low is preferable for tenderness.
  6. Check tenderness around cooking time; if needed, thicken gravy with cornstarch dissolved in water.
