Ingredients
- 2 slices turkey bacon
- 1 large yellow onion
- 1 cup carrots
- ¾ cup celery
- 4 tsp minced garlic
- 2 (15 oz) cans crushed tomatoes
- 2 (15 oz) cans cannellini beans
- 4 cups low sodium chicken broth
- 1 (16 oz) box ditalini pasta
Instructions
- Cook turkey bacon in a skillet over medium heat until crispy. Drain, chop, and add to the slow cooker.
- In the slow cooker, combine diced onions, sliced carrots, diced celery, minced garlic, crushed tomatoes, drained beans, chicken broth, salt, pepper, thyme, basil, parsley, and tomato paste. Stir well.
- Cover and cook on low for 7-8 hours or high for 4-5 hours.
- Add uncooked ditalini pasta during the last 30 minutes of cooking. Stir to ensure even cooking.
- Serve hot with grated Parmesan cheese on top.
