Instructions
- Prepare your ingredients by dicing the onion and bell peppers. Measure out the rice.
- In your slow cooker, combine ground beef (or turkey), diced onion, bell peppers, uncooked rice, diced tomatoes, beef broth, Italian seasoning, salt, and pepper.
- Stir until well mixed.
- Cover and cook on low for about 6 hours or high for 3 hours until everything is tender.
- Serve hot, topped with shredded cheese, sour cream, and fresh herbs as desired.
