Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups low-sodium beef broth
- 3 cups potatoes, diced
- 2 cups carrots, diced
- 2 cups celery, diced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease and transfer to a slow cooker.
- Sauté diced onion and minced garlic in the same skillet for 2-3 minutes until softened, then add to the slow cooker.
- Combine beef broth, diced potatoes, carrots, celery, diced tomatoes (with juices), Worcestershire sauce, dried basil, oregano, salt, and pepper in the slow cooker. Stir well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
- About 30 minutes before serving, stir in shredded cheddar cheese and heavy cream until melted and creamy.
- Adjust seasoning as needed and serve with desired toppings.
