Instructions
- Begin by preparing the béchamel sauce. In a saucepan over medium heat, melt the butter (50 grams). Add the flour (60 grams) and stir continuously for about 1-2 minutes until it forms a roux. Gradually pour in the milk (500 milliliters), whisking until smooth. Cook until thickened, then mix in the grated emmental cheese (250 grams), salt, pepper, and nutmeg before removing from heat.
- Preheat your oven to 180°C (350°F). Slice each croissant horizontally without cutting all the way through. Place a slice of chicken ham inside each croissant and top with a generous spoonful of the béchamel sauce.
- Arrange the filled croissants on a baking tray lined with parchment paper. Drizzle any remaining béchamel sauce over the top and bake for approximately 24 minutes or until golden brown and bubbling.
