- 25 g white sugar
- 5 g salt
- 5 g yeast
- 70 g milk
- 70 g water
- 150 g unsalted butter (70 g for dough + 125 g for layering)
- 400 g white sugar (for coating)
Instructions
- Prepare the butter layer by rolling cold unsalted butter into a square using parchment paper and refrigerating until hard.
- In a mixing bowl, combine flour, sugar, yeast, and salt. Whisk well before adding milk, water, and butter. Mix on low speed for about 10 minutes until smooth.
- Shape the dough into a ball, wrap in plastic, and refrigerate overnight.
- Roll out the dough into a rectangle twice the size of the butter square; place the cold butter in the center and fold the dough over it.
- Roll out again to three times its length, fold, chill for an hour, and repeat once more.
- Cut into strips and roll tightly to form cruffins; place in a greased muffin tin to proof.
- Preheat the oven and bake until golden brown.
