- 2 medium tart apples (e.g., Granny Smith), julienned
- 2 large carrots, peeled and julienned

Instructions
- Wash all produce thoroughly. Julienne the apples and carrots into thin strips.
- Thinly slice the red onion and chop the cilantro or parsley.
- In a mixing bowl, combine Greek yogurt, olive oil, orange juice, lemon juice, honey (or maple syrup), and Dijon mustard. Whisk until smooth and creamy; season with salt and pepper.
