- 6–8 beef sausages
- 2 onions (sliced)
- 2 carrots (peeled and sliced)
- 2 celery stalks (chopped)
- 2 cloves garlic (minced)
- 400 g chopped tomatoes
- 250 ml beef or vegetable broth
- 1 tbsp Worcestershire sauce
- 1 tbsp tomato paste
- 1 tsp dried thyme
- Salt and pepper to taste
- 800 g potatoes (thinly sliced)
- Olive oil for drizzling
- Fresh parsley (optional for garnish)
Instructions
- Preheat your oven to 180°C (350°F).
- In a large ovenproof skillet, heat olive oil over medium heat and brown the sausages on all sides for about 5-7 minutes. Remove and set aside.
- In the same skillet, sauté onions, carrots, and celery until softened (about 5 minutes), then add minced garlic and cook for an additional minute.
- Stir in chopped tomatoes, broth, Worcestershire sauce, tomato paste, thyme, salt, and pepper; bring to a simmer.
- Return the sausages to the skillet, nestling them into the sauce mixture. Arrange sliced potatoes on top, drizzle with olive oil, and season.
- Cover and bake for 45 minutes; uncover and bake an additional 15-20 minutes until potatoes are golden.
