  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 800 g potatoes (thinly sliced)
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a large ovenproof skillet, heat olive oil over medium heat and brown the sausages on all sides for about 5-7 minutes. Remove and set aside.
  3. In the same skillet, sauté onions, carrots, and celery until softened (about 5 minutes), then add minced garlic and cook for an additional minute.
  4. Stir in chopped tomatoes, broth, Worcestershire sauce, tomato paste, thyme, salt, and pepper; bring to a simmer.
  5. Return the sausages to the skillet, nestling them into the sauce mixture. Arrange sliced potatoes on top, drizzle with olive oil, and season.
  6. Cover and bake for 45 minutes; uncover and bake an additional 15-20 minutes until potatoes are golden.
