- 1 ½ cups fresh or frozen cherries, pitted
Instructions
- Prepare the cherry compote by simmering cherries with sugar and water, then thickening with cornstarch slurry.
- For the crust, mix cookie crumbs, melted butter, and sugar; press into a springform pan and bake until set.
- Beat cream cheese with sugars until smooth; mix in sour cream and vanilla before adding melted chocolate. Incorporate eggs one at a time.
- Layer half the batter and cherry compote in the pan; swirl together. Repeat with remaining batter and compote.
- Bake in a water bath until edges are set; cool gradually in the oven to prevent cracking.
- Chill for at least 6 hours before serving.
