Instructions
- In a heavy-bottomed pot, combine sugar, salt, and orange zest until mixed well.
- Add egg yolks and the juices from the oranges and lemons; whisk until smooth.
- Cook over low-medium heat, stirring continuously until thickened (about 10-15 minutes).
- If using, add rosemary sprig and stir for an additional 5 minutes.
- Strain the curd into a bowl containing butter; whisk until melted.
- Cover with cling wrap and chill in the refrigerator for about an hour before serving.
