- ¾ cup dried cranberries
- ½–¾ cup red onion (finely diced)
- 1 cup pecans (toasted)
- 1 Tablespoon pure maple syrup
- 3 Tablespoons red apple vinegar
- 1 Tablespoon lemon juice
- 2 Tablespoons + 1 teaspoon tahini
- 2 teaspoons Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 pinch sea salt
Instructions
- Wash and dice the celery, Honeycrisp apple, and red onion. Toast the pecans in a dry skillet over medium heat until fragrant.
- In a mixing bowl, whisk together maple syrup, red apple vinegar, lemon juice, tahini, Dijon mustard, garlic powder, onion powder, and salt until smooth.
- In a large serving bowl, combine the diced celery, apple, dried cranberries, red onion, and toasted pecans. Pour the dressing over the salad.
- Gently toss all ingredients until evenly coated with dressing. Adjust seasoning as needed before serving.
