Instructions
- Preheat oven to 350°F (175°C) and grease three 8-inch round cake pans.
- In a bowl, whisk together cake flour, baking powder, and salt.
- In a large mixing bowl, beat butter and sugar until light and fluffy. Add egg whites one at a time, mixing well after each addition. Stir in vanilla and optional almond extract.
- Alternately add the flour mixture and milk until just combined.
- Divide batter into four bowls; color each portion with different pastel food coloring.
- Pour into prepared pans and bake for 22-25 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
- For frosting, beat softened butter until creamy; gradually add powdered sugar and mix well. Add cream and vanilla extract; beat until fluffy.
- Assemble the cake by stacking layers with frosting in between; frost the top and sides.
- Decorate with vegan marshmallow Peeps and sprinkles as desired.
