  • 2 ¾ cups whole milk
  • 2 cups heavy cream
  • 3 Tablespoons granulated sugar
  • 1 cup sweetened shredded coconut
  • Easter sprinkles and/or candy (optional topping)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine cake mix, egg whites, vegetable oil, Greek yogurt, and whole milk until smooth.
  2. Divide batter into three bowls; color each with pink, yellow, and blue gel food coloring.
  3. Grease a 9×13 inch baking pan; pour colored batters in alternating sections or swirls. Bake for about 25 minutes or until a toothpick comes out clean.
  4. Whisk pudding mix with whole milk until thickened; refrigerate to chill.
  5. Once cooled, poke holes in the cake and pour chilled pudding over it.
  6. Whip heavy cream with sugar until soft peaks form; spread over the pudding layer and top with shredded coconut.
