Instructions
- Preheat your oven to 350°F and line two cookie sheets with parchment paper.
- In a stand mixer, combine cake mix, egg, and butter until a soft dough forms. Stir in 1 cup of Easter sprinkles.
- Scoop the dough into balls and roll in remaining sprinkles.
- Bake for 10-12 minutes. Cool on wire racks.
- For frosting, beat together softened butter, powdered sugar, heavy whipping cream, and pink gel food coloring until creamy.
- Assemble by piping frosting onto one cookie and topping it with another.
