- 8 oz medjool dates
- 1 cup boiling water
- 3/4 cup boiling milk
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 3 large eggs
- 1 1/4 cup all-purpose flour
- 1/2 cup Dutch processed cocoa powder
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 1 tsp salt
- 8 tbsp unsalted butter for sauce
- 3/4 cup brown sugar for sauce
- 1 cup cream for sauce
- 1 cup milk for sauce
- 200g dark chocolate for sauce
- 1/2 tsp salt for sauce
Instructions
- Soak chopped medjool dates in boiling water for about 10 minutes until softened.
- In a mixing bowl, cream together softened butter and brown sugar. Add eggs one at a time and mix well. Stir in vanilla.
- Mix dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt in another bowl. Gradually combine with wet mixture while alternating with boiling milk. Fold in soaked dates along with their soaking water.
- Preheat oven to 350°F (175°C). Grease your baking dish and pour in the batter. Bake for approximately 25 minutes or until a toothpick comes out clean.
- For the sauce, melt butter, brown sugar, cream, and milk in a saucepan over medium heat. Stir in dark chocolate until smooth.
- Drizzle warm sauce over pudding slices before serving.
