Ingredients
- 10 medium organic lemons
- 750 ml strong lemon juice (or other lemon juice alternative)
- 3 cups filtered water
- 2 cups white granulated sugar
Instructions
- Wash and scrub the lemons thoroughly. Zest them using a zester or grater while avoiding the bitter pith.
- Place the lemon zest in a large glass jar and pour in the strong lemon juice. Seal tightly and let infuse in a cool, dark place for 3 to 6 weeks, shaking gently every few days.
- Prepare a simple syrup by heating filtered water and sugar in a saucepan until dissolved. Allow it to cool completely.
- After infusion, combine the cooled syrup with the lemon juice mixture, stir well, and let rest for an additional 7 days.
- Strain through a fine mesh strainer to remove zest particles, then bottle your limoncello and store it in the freezer until ready to serve.
