Instructions
- In a mixing bowl, whisk together olive oil, lemon zest, garlic, parsley, oregano, and paprika until well combined.
- Add the shrimp to the marinade and toss gently to coat. Marinate for at least 15 minutes (up to 1 hour for stronger flavor).
- Preheat your grill to medium-high heat.
- Thread marinated shrimp onto skewers, sprinkling with kosher salt.
- Grill kabobs for 2-3 minutes per side until shrimp turn pink and opaque.
- Garnish with chopped parsley before serving.
