- 1 cup raisins
Instructions
- In a large bowl, whisk together flour, yeast, salt, cinnamon, and brown sugar until well combined.
- Gradually add warm water while mixing with a wooden spoon until a shaggy dough forms.
- Fold in the raisins until evenly distributed in the dough.
- Cover the bowl with plastic wrap or a kitchen towel and let it rise at room temperature for 12-18 hours.
- After rising, turn the dough onto a floured surface and shape it into a round loaf.
- Let the shaped dough rise for another hour while preheating your oven to 450°F (230°C) along with a Dutch oven inside.
- Carefully transfer the loaf into the hot Dutch oven, cover, and bake for 30 minutes. Remove the lid and bake for an additional 15-20 minutes until golden brown.
- Cool on a wire rack before slicing.
