  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg, at room temperature
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed brown sugar
  • 3/4 cup (180ml) buttermilk, at room temperature
  • 1/3 cup (80ml) vegetable oil or melted coconut oil
  • 2 teaspoons pure vanilla extract or vanilla bean paste
  • 1 and 1/2 cups (230g) chopped fresh strawberries, tossed in 1 Tablespoon of flour
  • 1/2 cup (60g) confectioners' sugar, sifted
  • 1 Tablespoon (15ml) heavy cream or milk
  • 1/4 teaspoon pure vanilla extract or vanilla bean paste

Instructions

  1. Preheat your oven to 350°F (177°C) and grease an 8×4-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, combine the egg, granulated sugar, brown sugar, and buttermilk. Mix in oil and vanilla extract.
  4. Gradually pour the wet mixture into the dry ingredients until just combined. Fold in chopped strawberries gently.
  5. Pour batter into the prepared loaf pan and bake for 55–70 minutes or until a toothpick comes out clean.
  6. Allow to cool in the pan for 1 hour before transferring to a wire rack.
