- 2 cups (250g) all-purpose flour (spooned & leveled)
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg, at room temperature
- 3/4 cup (150g) granulated sugar
- 1/4 cup (50g) packed brown sugar
- 3/4 cup (180ml) buttermilk, at room temperature
- 1/3 cup (80ml) vegetable oil or melted coconut oil
- 2 teaspoons pure vanilla extract or vanilla bean paste
- 1 and 1/2 cups (230g) chopped fresh strawberries, tossed in 1 Tablespoon of flour
- 1/2 cup (60g) confectioners' sugar, sifted
- 1 Tablespoon (15ml) heavy cream or milk
- 1/4 teaspoon pure vanilla extract or vanilla bean paste
Instructions
- Preheat your oven to 350°F (177°C) and grease an 8×4-inch loaf pan.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, combine the egg, granulated sugar, brown sugar, and buttermilk. Mix in oil and vanilla extract.
- Gradually pour the wet mixture into the dry ingredients until just combined. Fold in chopped strawberries gently.
- Pour batter into the prepared loaf pan and bake for 55–70 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 1 hour before transferring to a wire rack.
