Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a mixing bowl, blend eggs, sugar, sour cream, olive oil, and vanilla extract using a hand mixer until smooth.
- In another bowl, whisk together flour, baking powder, and salt. Gradually incorporate this dry mixture into the wet ingredients until just combined.
- Gently fold in hulled strawberries.
- Pour batter into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
- To make the strawberry sauce, cook halved strawberries with sugar over medium heat until softened, then let cool slightly.
- Once the cake has cooled completely, serve slices drizzled with warm strawberry sauce.
