Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large bowl, whisk together cottage cheese and eggs until smooth.
- Stir in oats, baking powder, salt, pepper, and chopped spinach until well combined.
- Gently fold in the shredded cheddar cheese.
- Pour the mixture into the prepared baking dish and bake for 25-30 minutes until golden brown and set.
- Allow to cool for 10 minutes before slicing into bars.
