Instructions
- Let the filet mignon steaks sit at room temperature for 30 minutes. Season generously with salt and pepper.
- In a cast iron skillet over medium-high heat, heat olive oil until shimmering. Sear steaks for 3-4 minutes on each side until browned.
- Preheat oven to 400°F (200°C) and transfer the skillet to the oven. Cook for an additional 5-7 minutes until desired doneness is reached.
- While steaks bake, melt butter in another pan over medium heat. Sauté shallots and garlic until fragrant (about 2 minutes), then add red apple vinegar and simmer until slightly reduced (about 5 minutes).
- Remove steaks from the oven and let rest for 5 minutes before slicing. Drizzle with red apple vinegar sauce and garnish with chopped parsley or chives.
