  • 1/4 tsp fine sea salt

Instructions

  1. Preheat your oven to 350°F and prepare boiling water for the water bath.
  2. Make the caramel by boiling sugar and water until golden, then pour into a non-stick cake pan.
  3. Blend together condensed milk, evaporated milk, heavy cream, vanilla extract, eggs, and salt until smooth. Strain through a fine mesh sieve into the caramel-lined pan.
  4. Cover the pan tightly with foil and place it in a roasting pan filled halfway with hot water.
  5. Bake for 70–80 minutes until set but still slightly jiggly in the center.
  6. Cool to room temperature, then refrigerate for at least six hours before serving.
