- 2 1/4 cups all-purpose flour
- 1 TBSP cinnamon
- 2 TBSP unsalted butter for breadcrumbs
- 1 cup fresh white bread crumb
- 2 cups powdered sugar for glaze
- 2 TBSP milk
- 2 TBSP maple syrup for glaze
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together unsalted butter and 1 1/2 cups granulated sugar until light and fluffy.
- Mix in the egg, vanilla extract, and maple syrup until well combined.
- Add freshly ground nutmeg, salt, and baking powder; mix well. Gradually incorporate all-purpose flour until just combined.
- Shape dough into ping-pong-sized balls and roll in a cinnamon-sugar mixture before placing on baking sheets.
- Flatten each ball gently with the bottom of a glass and bake for 8-10 minutes or until golden around the edges.
- Cool on baking sheets for 10 minutes before transferring to a wire rack.
- Prepare brown butter breadcrumbs by melting unsalted butter in a skillet; toss in toasted bread crumbs until golden brown.
- Create the glaze by whisking powdered sugar, milk, maple syrup, and salt until smooth; drizzle over cooled cookies topped with breadcrumbs.
