Instructions

  1. Carefully scoop the yolks from the hardboiled eggs into a mixing bowl. Add mayonnaise, sweet pickle relish, Dijon mustard, salt, and pepper. Mash until smooth.
  2. Set up your coating station with three shallow dishes: one for flour, one for beaten eggs, and one for a mixture of panko breadcrumbs and crushed crackers.
  3. Dredge each egg white in flour, dip in beaten eggs, then coat with the breadcrumb mixture.
  4. Heat oil in a tall pot to 350°F. Fry breaded egg whites in small batches until golden brown (2-3 minutes per side). Drain on paper towels and cool on a rack.
