- 12 large hardboiled eggs
- 2 tablespoons mayonnaise

- 1 ½ cups all-purpose flour
- 2 large eggs
- 1 ½ cups panko breadcrumbs
- 1 cup finely crushed butter crackers
- Oil for frying
Instructions
- Carefully scoop the yolks from the hardboiled eggs into a mixing bowl. Add mayonnaise, sweet pickle relish, Dijon mustard, salt, and pepper. Mash until smooth.
- Set up your coating station with three shallow dishes: one for flour, one for beaten eggs, and one for a mixture of panko breadcrumbs and crushed crackers.
- Dredge each egg white in flour, dip in beaten eggs, then coat with the breadcrumb mixture.
- Heat oil in a tall pot to 350°F. Fry breaded egg whites in small batches until golden brown (2-3 minutes per side). Drain on paper towels and cool on a rack.
- Fill each fried egg white with the yolk mixture just before serving and garnish with chives.
