Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, whisk together the eggs, milk, Parmesan cheese, salt, and black pepper until well combined.
- Heat olive oil in an oven-safe skillet over medium heat. Sauté the onion and bell pepper until softened (about 5 minutes). Add zucchini and mushrooms; cook until tender (5-7 minutes). Stir in spinach until wilted.
- Pour the egg mixture evenly over the vegetables in the skillet.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes or until set and lightly golden around the edges.
- Allow to cool slightly before slicing into wedges. Serve warm or at room temperature.
