- 2 chicken breasts
- 1 cup mushrooms, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 medium potatoes, peeled and cubed
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tsp garlic powder
- Salt & pepper
- 1 clove garlic, minced
- Fresh parsley, chopped (for garnish)
- 1 cup milk
Instructions
- Boil cubed potatoes in salted water until tender (about 15 minutes). Drain and mash with butter and milk until smooth.
- In a skillet, heat olive oil and butter over medium heat. Season chicken breasts with garlic powder, salt, and pepper. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet to rest.
- Sauté onions in the same skillet until softened, then add mushrooms, peppers, and minced garlic. Season with salt and pepper; cook until tender.
- Serve by placing mashed potatoes on each plate, topping with chicken and surrounding it with sautéed vegetables. Garnish with fresh parsley.
