Ingredients
- 2 cups cooked rice (white or brown)
- 1 pound boneless, skinless chicken thighs or breasts
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder

- 1 cucumber, grated
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh dill (or 1 teaspoon dried)
- Fresh parsley or mint, for garnish
- Cherry tomatoes, halved (optional)
- Feta cheese, crumbled (optional)
Instructions
- In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add chicken to coat well. Marinate for at least 10 minutes.
- Combine grated cucumber with Greek yogurt, minced garlic, dill, and a pinch of salt in another bowl. Mix well and refrigerate.
- Heat a grill pan over medium-high heat. Cook marinated chicken for about 5-7 minutes on each side until fully cooked (165°F or 75°C).
- Remove from heat and let rest before slicing into strips.
- In serving bowls, add cooked rice as a base. Layer with sliced chicken and tzatziki sauce. Customize with optional toppings if desired.
- Garnish with fresh herbs before serving.
