Instructions
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, salt, and pepper to create the marinade.
- Place chicken thighs in a large bowl and pour the marinade over them. Ensure they are well coated. Cover and refrigerate for 1 to 8 hours.
- Preheat your oven to 350°F (180°C). Transfer the marinated chicken to a baking dish and pour any remaining marinade over the top.
- Bake for 40 to 45 minutes until the internal temperature reaches 175°F (80°C). For crispy skin, broil for an additional 2 to 3 minutes.
