- 1 pie crust (store-bought or homemade)
- 3 cups mixed berries (fresh or thawed frozen)
- 1/3 cup granulated sugar (plus extra for sprinkling)
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- Zest of 1/2 lemon
- 1 teaspoon heavy whipping cream
Instructions
- Preheat the grill to approximately 350°F.
- In a mixing bowl, combine berries, sugar, cornstarch, lemon juice, and zest. Toss gently until well mixed.
- Lay the pie crust in a disposable foil pie pan and fill with the berry mixture. Fold the edges of the crust over the filling and brush with heavy cream; sprinkle with sugar.
- Place another foil pan upside down on the grill. Carefully put your assembled pie on top and close the lid.
- Grill for 20-30 minutes, checking at 15 minutes to prevent burning. Once golden brown, remove from grill and let cool before serving.
