- 2 lbs baby Yukon gold potatoes (halved)

Instructions
- Bring a large pot of salted water to a boil. Add halved potatoes and boil for 10–12 minutes until fork-tender. Drain and let cool slightly.
- In a mixing bowl, toss warm potatoes with olive oil, minced garlic, salt, pepper, and smoked paprika until evenly coated.
- Preheat your grill to medium-high heat. Place potato halves cut-side down on the grill and cook for 5–6 minutes until charred; flip and grill for another 2–3 minutes.
- Transfer to a platter, garnish with fresh parsley, serve hot.
