- 4 Boneless Skinless Chicken Breasts
- 1 cup BBQ Sauce
- 1 (15 oz) Can Pineapple Slices (including juice)
- 2 teaspoons Soy Sauce
- 1 teaspoon Garlic
- 1 Red Bell Pepper (cut into cubes)
- 2 medium Zucchini (sliced)
- Green Onions (for garnish)
Instructions
- Preheat the grill to medium heat and cut four sheets of heavy-duty aluminum foil.
- Place one chicken breast in the center of each foil piece. Add red bell pepper cubes, zucchini slices, and 2-3 pineapple slices on top.
- In a bowl, whisk together BBQ sauce, pineapple juice, soy sauce, and garlic. Pour about 2 tablespoons over each chicken breast, saving some for later.
- Seal the foil packets tightly and grill for 13-15 minutes, flipping halfway through.
- Carefully open packets after grilling, baste with reserved sauce, garnish with green onions, and serve.
