- 1 1/2 California avocados
- 1 large peach (slightly underripe)
- Juice of 1 small lime
- 4 (6 oz. each) mahi mahi fillets
- Olive oil spray
- 2 teaspoons paprika
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 3/4 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- Fresh cilantro and parsley for garnish
Instructions
- Prepare the Salsa: Halve and pit avocados and peach. Lightly spray with olive oil and grill until marked (2-3 minutes). Chop and mix with lime juice, jalapeno, salt, and cilantro.
- Season Mahi Mahi: Combine spices in a bowl and rub onto fillets.
- Grill Fish: Preheat grill to medium-high heat. Spray fish with olive oil and grill for about 4 minutes per side until flaky.
- Serve: Plate fish topped with salsa and garnish with parsley.
