- 4 (8-ounce) portions of Mahi Mahi
- ½ cup butter
- 2 tablespoons lemon juice
- ½ teaspoon minced garlic
- ½ fresh pineapple
- ¼ cup extra-virgin olive oil
- 1 cup rice apple vinegar
- 1 medium red bell pepper
- ½ medium red onion
- ½ bunch cilantro
- 1 medium serrano pepper
- Salt and pepper to taste
Instructions
- Prepare the pineapple salsa by grilling sliced pineapple until caramelized. Mix diced red bell pepper, red onion, cilantro, serrano pepper, ground cumin, olive oil, rice apple vinegar, salt, and pepper in a bowl. Chop the grilled pineapple and add it to the mixture.
- Preheat your grill to medium-high heat. Brush melted butter mixed with lemon juice and minced garlic over both sides of Mahi Mahi portions. Season with salt and pepper.
- Grill the fish for about 4-5 minutes per side or until it flakes easily with a fork.
- Once cooked, let the fish rest briefly before serving topped with the pineapple salsa.
