Ingredients
- 4 boneless skinless chicken breasts (6 oz each)
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger
- 1.5 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon turmeric
- Salt and pepper to taste
Instructions
- Pound the chicken breasts to an even thickness using a meat mallet.
- In a mixing bowl, combine olive oil, lemon juice, garlic, ginger, cumin, coriander, paprika, cinnamon, turmeric, salt, and pepper.
- Place the chicken in a resealable bag and pour the marinade over it. Seal the bag while removing excess air and ensure all chicken is coated evenly. Marinate in the fridge for at least 2 hours or overnight for best results.
- Preheat your grill to medium-high heat (about 425°F).
- Grill the marinated chicken for approximately 4 minutes per side or until an instant-read thermometer shows an internal temperature of 165°F.
- Allow the chicken to rest for about 5 minutes before serving.
