  • 1 pineapple
  • 1 tbsp olive oil
  • 5 cups chopped romaine lettuce
  • 1/2 red onion
  • 1/2 cucumber
  • 1 cup cherry tomatoes
  • 1 avocado
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lime juice
  • 2 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp pink sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes

Instructions

  1. Cut off the skin of the pineapple, remove the core, and slice into rings. Brush with olive oil.
  2. Season chicken breasts with olive oil, salt, pepper, thyme, garlic powder, and red pepper flakes.
  3. Preheat your grill to medium-high heat. Grill chicken for about 7 minutes per side and pineapple rings for 3–4 minutes per side until caramelized.
  4. While grilling, chop romaine lettuce, slice red onion and cucumber, halve cherry tomatoes, and prepare the avocado.
  5. In a bowl, whisk together dressing ingredients: olive oil, lime juice, honey, garlic powder, salt, pepper, and red pepper flakes.
  6. Slice grilled chicken into strips. In a serving bowl, layer lettuce first followed by other veggies, then top with grilled chicken and pineapple.
  7. Drizzle dressing over the salad before serving.
