Ingredients
- 2 large chicken breasts
- 1 tbsp olive oil
- 1 tsp pink sea salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1/2 tsp red pepper flakes
- 1 pineapple
- 1 tbsp olive oil
- 5 cups chopped romaine lettuce
- 1/2 red onion
- 1/2 cucumber
- 1 cup cherry tomatoes
- 1 avocado
- 1/4 cup extra virgin olive oil
- 1/4 cup lime juice
- 2 tbsp honey
- 1 tsp garlic powder
- 1 tsp pink sea salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes
Instructions
- Cut off the skin of the pineapple, remove the core, and slice into rings. Brush with olive oil.
- Season chicken breasts with olive oil, salt, pepper, thyme, garlic powder, and red pepper flakes.
- Preheat your grill to medium-high heat. Grill chicken for about 7 minutes per side and pineapple rings for 3–4 minutes per side until caramelized.
- While grilling, chop romaine lettuce, slice red onion and cucumber, halve cherry tomatoes, and prepare the avocado.
- In a bowl, whisk together dressing ingredients: olive oil, lime juice, honey, garlic powder, salt, pepper, and red pepper flakes.
- Slice grilled chicken into strips. In a serving bowl, layer lettuce first followed by other veggies, then top with grilled chicken and pineapple.
- Drizzle dressing over the salad before serving.
