- Bone-in beef chops (4, 1/2-inch thick)
- Olive oil (1 1/2 teaspoons)
- Chili powder (1 1/2 teaspoons)
- Ground cumin (1/2 teaspoon)
- Frozen pineapple concentrate (1/4 cup, thawed)
- Salt (1/2 teaspoon)
- Ground pepper (1/2 teaspoon)
- Fresh parsley for garnish (2 tablespoons, finely chopped)
Instructions
- Preheat your grill to medium heat and lightly oil the grates.
- In a small skillet over medium heat, heat olive oil and add chili powder and cumin. Stir in the pineapple concentrate and simmer until reduced to about 2 tablespoons. Let it cool slightly.
- Season both sides of the beef chops with salt and pepper.
- Generously rub the glaze over each chop.
- Grill the chops for about 3 minutes on one side; flip and cook an additional 2 minutes until they reach desired doneness.
- Remove from grill and serve immediately.
