- 1 pound russet potatoes (cut into 1-inch pieces)

- 1 tablespoon + 1 teaspoon olive oil
- 1 ½ teaspoon crushed dried rosemary
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon ground pepper
- 2 tablespoons fresh parsley (finely chopped)
Instructions
- Preheat your grill to medium heat.
- In a large bowl, combine the russet potatoes, onion, and garlic cloves. Drizzle with olive oil and toss until coated.
- Add rosemary, smoked paprika, salt, and pepper. Toss again to ensure even seasoning.
- Lay out two pieces of aluminum foil in an X shape. Place the potato mixture in the center and wrap tightly to seal.
- Grill the foil packet for 20 minutes. Carefully flip it over and grill for an additional 15-20 minutes until tender and slightly browned.
- Let sit for 10-15 minutes before serving.
