Instructions
- Preheat your grill to medium-high heat (about 425°F). Brush grates with oil.
- Drizzle olive oil over zucchini slices; season with salt and pepper. Grill for 2-3 minutes per side until tender with grill marks.
- In a grill pan, combine cherry tomatoes and corn kernels with one tablespoon of olive oil; season with salt and pepper. Grill while stirring for about 2-3 minutes.
- In a large bowl, whisk together three tablespoons olive oil, lemon juice, minced garlic, oregano, salt, and pepper for the dressing.
- Add grilled zucchini, tomatoes, corn, and arugula to the bowl; toss gently until well combined. Top with goat cheese before serving.
