- 1 pound elbow macaroni
- 1 cup mayonnaise

Instructions
- Cook the elbow macaroni in salted water until al dente, then drain and cool.
- In a mixing bowl, combine mayonnaise, sweet pickle relish, apple cider vinegar, yellow mustard, salt, and pepper. Mix well.
- Fold the cooled macaroni into the dressing along with celery, onion, and optional hard-boiled eggs.
- Chill in the refrigerator for at least one hour before serving.
- Garnish with paprika before serving.
