- 6 Granny Smith or Honeycrisp apples
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1 tsp vanilla extract
- Pinch of salt
- Assorted toppings (chopped peanuts, mini chocolate chips, mini M&M's, Halloween sprinkles)
Instructions
- Thoroughly wash and dry the apples. Insert sticks into the center of each apple and prepare a tray lined with parchment paper.
- In a heavy-bottomed saucepan, combine sugar, corn syrup, cream, and butter over medium heat. Stir until sugar dissolves completely.
- Once dissolved, monitor closely while bringing to a gentle boil until it reaches 240°F (soft-ball stage) on a candy thermometer.
- Remove from heat and stir in vanilla and salt. Allow to cool for 1-2 minutes before dipping each apple into the caramel.
- Roll dipped apples in your choice of toppings immediately while the caramel is still warm.
