- 3 cups powdered sugar
- 2–3 tbsp pineapple juice (reserved from the can)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a mixing bowl, combine flour, sugar, baking soda, and salt. Add eggs, vanilla extract, and crushed pineapple with juice; mix until blended.
- Fold in optional chopped pecans and shredded coconut. Divide batter into prepared pans and bake for 30-35 minutes.
- For frosting, beat cream cheese and butter until smooth; gradually add powdered sugar, then mix in vanilla extract and reserved pineapple juice until spreadable.
- Assemble the cake by layering frosting between cake layers and on top; garnish as desired.
