Instructions
- In a small bowl, mix yeast with warm water; let sit until foamy (about 5 minutes).
- In a large bowl, whisk flour, sugar, and salt; cut in butter until crumbly.
- Stir in milk, egg yolks, and yeast mixture until a sticky dough forms.
- Cover and chill dough in the refrigerator for 8 to 24 hours.
- On a floured surface, divide dough into four portions; pat each into rectangles and sprinkle with cinnamon.
- Cut rectangles into strips, twist them, then coil around themselves.
- Prepare filling by beating cream cheese with sugar and egg yolk until smooth; fill each pastry indentation.
- Let pastries rise in a warm area until doubled (about 45 minutes).
- Preheat oven to 350°F and brush pastries with beaten egg white.
- Bake for 15 to 20 minutes until golden brown; glaze with maple syrup.
