Ingredients
- 1 leg quarter (bone-in, skin-on) chicken
- 1 tsp olive oil
- 1 tsp dried thyme or Italian seasoning
- Salt & pepper, to taste
- 1 clove garlic, minced
- 1 cup green beans, trimmed
- 1 tsp olive oil or butter
- 1 garlic clove, minced
- Salt & black pepper to taste
- 1 cup baby carrots
- 1 tsp olive oil
- 1 tsp honey or maple syrup
- Pinch of salt & black pepper
Instructions
- Preheat your oven to 400°F (200°C). Rub the chicken leg quarter with olive oil, thyme (or seasoning), minced garlic, salt, and pepper. Place it on a baking sheet and roast for 35-40 minutes until golden brown.
- While the chicken roasts, toss baby carrots with olive oil, honey, salt, and pepper in a bowl. Spread onto another baking sheet and roast in the oven for 25-30 minutes until tender.
- In a skillet over medium heat, add olive oil and minced garlic. Once fragrant, add green beans and sauté for 6-8 minutes until bright green.
- Serve the roasted chicken with glazed carrots and sautéed green beans on the side.
